(Soon to be World Famous) Pimento Goat Cheese
CEO/Founder Amber Lewis stumbled into a recipe for our popular Pimento Goat Cheese. And it's magnificent!
As she did with beginning a meal delivery business, Amber Lewis (CEO/Founder) stumbled upon the idea for Pimento Goat Cheese in a search to feed her friends well.
"This recipe came to be several years ago during the holidays. I was heading to our annual gift exchange and I needed something to take with me. I really wanted Pimento Cheese, often referred to the caviar of the south. I don’t disagree. But, two of my girlfriends would not eat store bought traditional pimento cheese. For very different reason. One is deathly afraid of mayonnaise. Like, it’s serious. The other has a dairy intolerance and can only have goat or sheep dairy. So, I was on a mission to create a pimento cheese with just goat dairy and no mayo. Looking at several recipes, I figured I could sub soft goat cheese out for the mayo by loosening it up with apple cider vinegar, water and a little avocado oil. I found goat cheddar at Whole Foods and the rest is history!"
Although Amber created all of the original recipes, the culinary experts of TGK now handle the menu development and cooking. Under Amber's watchful eye, of course. Well, except this Pimento Goat Cheese. That's still Amber's original recipe. And always will be.
